I wanted to make an infusion that would smell and taste as enchanting as the beautiful Borealis Forests themselves.

I sourced my ingredients from a Canadian spice company (‘Épices de Cru’) that sells herbs and spices from around the world, with a strong focus on Canadian botanicals. I combined two well-known aromas (Spruce and Fir tips) with a lesser known Borealis spice called NannyBerry, which adds floral and woody notes to the mix. The result of this combination is a fresh and fragrant forest-inspired infusion that just screams ‘Oh Canada’. The flavours infused very well, so the vodka can stand up to stronger mixers, such as Gingerbeer and Coke. I would also work well as a layering agent in artisanal cocktails. If you’re lucky enough to have access to these ingredients in the spring when they’re in season, I would recommend picking them fresh!
Ingredients:
- 6g Fir Tips
- 4g Spruce Tips
- 1/4tsp Nanny Berry
Method:
24hr infusion/Water to the 40% mark
