I was also very happy with this infusion. I would always recommend using frozen fruit when infusing with berries.
CRE8ion by Jess Morton
Frozen raspberries are harvested at peak ripeness, and the freezing process breaks down the cell walls of the fruit. Perfect for fast infusions. This infusion also had the perfect tart/sweet balance, and the jasmine blossoms helped give the final product a grassy note. This is another fruit-forward spirit infusion without the sugar.
One thing I would change is to add some jasmine blossom water. The dried jasmine blossoms added some nice flavours, but didn’t contribute that signature floral note I was hoping for. I would add a tablespoon of jasmine blossom water to the infusion before dilution. Would definitely make it again. This one has tons of cocktail applications from cosmos, to a French 75, to highball fizz.
Ingredients:
- 1 cup frozen raspberries
- 2 teaspoons jasmine blossoms
Method:
- Throw all ingredients in a glass mason jar, seal, and let sit in a cool and dark place.
- Infusion time: 24 hours
- Strain out all ingredients, and funnel back into the CRE8 Vodka bottle.
- Fill with purified water to the 40% ABV mark on the bottle. Shake well and enjoy.
Infusion Rating (out of 5): 4.5/5
