Valentine’s Day always brings to mind the delicious desserts we indulge in in celebration of love.

In honour of that, I was inspired to make a strawberry-pink peppercorn infusion that would pair perfectly with chocolate – the quintessential Valentine’s Day sweet. My first impression was that the infusion had a lot of potential, but the balance of flavours needed some adjustment. So, I did a second batch with more strawberries (the juiciest I could find) and a touch more cinnamon. That did the trick, and the strawberry-peppercorn balance was achieved!
Ingredients:
- 350g strawberries (sliced)
- 7g cinnamon bark (broken up)
- 5g pink peppercorn (crushed)
- 3g green peppercorn (crushed)
Method:
- Throw all the ingredients in your CRE8 Vodka bottle at 90% and leave for 24 hours.
- Filter out the solids.
- Fill it up with water to the 40% mark.
